Ok, before I being, this is an annoyance with the diet itself but not really a reason to not do it.
Alright...so I'm a cyclist...I'm always hungry right? Well yes. But here's the thing and one of my biggest struggles with this diet...I never seem to be fully satisfied. Here's an example of a daily meal routine.
Breakfast: big 2-egg omelette with tons of veggies, 2 cups of coffee, and side of fruit
Mid-morning snack: nuts, banana, possibly more coffee or tea
Lunch: lettuce wrap sammie with bacon, avocado, tomato, etc
Mid-afternoon snack: more nuts, a little chocolate (yes not paleo whatever) tons of water
Dinner: 8 oz filet, side salad, water, maybe some vino
Post dinner snack (prior to 8pm): nuts, carrots, fruit
Calorie wise this day actually balanced out perfectly. Throw in a ride I might offset that with either a banana, or gel/gu to maintain my calorie needs for training.
Problem is though, you still feel hungry. Here's where I can't quite figure it out, is it the lower amount of salts in the diet, the lower amount of starches and carbs and non-bloating issues that accompany it...but not matter what...Usually all meals leave me feeling just right...but I start to feel hungry within an hour of eating.
Regardless it is more of an annoyance because I am always snacking, which leads to temptation to eat other non-paleo things. That said, even snacking alot, my weight stays consistent. My thought on that is: (1)
lower salt snacks mean no retained water and additional water weight fluctations, (2) and snacking on non-refined foods means your body has to work harder to process them and this results in additional calories burned.

I tried the no carb thing for a while last week. I got to lunch on the 4th day and broke down.
Like you say, you just feel empty after a while. Everyone tells you that the protein and the fiber in the veggies and fruit should fill you up, but on that last day, I think my body craved carbs.
You'd think it'd hit me just after 2 days being that's quite a few meals without carbs. And I do have to admit, at the beginning, I felt nice and even keeled all day. No 2:30pm bonk, I slept well, the food was tasty. But man, those potatoes tasted real good for lunch on the 4th day.
I hope you have some luck figuring out what can make the diet work for you. Maybe adding in some low gluten, low glycemic carbs would help? Well, in any event, keep us updated.

I guess I should clarify, although I feel hungry..I solve that by snacking a lot. So I tend to extend the snacks of nuts and fruit throughout the entire day. I also tend to find that most of it is habitual eating that things like green tea (a natural appetite suppressent can help with).
remember paleo isn't necessarily low carb. As eating a ton of fruits and veggies provide carbs.
I guess what I was trying to explain is that eventually you get used to the feeling of being not completely full all the time. Which I think is improperly satiated by the refined foods we eat. In general by constantly snacking my energy levels stay much more constant during the day.
